Most travelers make Siem Reap their base for visits to the Temples of Angkor. It's a 20 minute drive from the new airport, which is as nice as just about any in the US. It's the only airport in the world I've gone from the front door of the terminal to check in, and through security and customs in less than 5 minutes.

The following restaurants serving traditional Cambodian cuisine were all good choices:

Sugar Palm, Mahob, Wat Damnak, and Embassy, Just outside of Embassy is an excellent indoor/outdoor handicrafts market

I would highly recommend staying at the Raffles Hotel. Ther Elephant Bar is a good choice for happy hour and Cafe D'Angkor has a great breakfast buffet in addition to excellent lunch and dinner items. There is also an outdoor restaurant that features traditional Cambodian Aspara dancers and a buffet dinner. 

Just around the corner from the hotel is the best shopping mall I ran across, and next door, the National Museum.
